Our Story
Zabardast is a family business with a heritage that lies in Northern India. From the time when our parents arrived in London in the 1950’s we shared freshly cooked Indian recipes for breakfast, lunch and dinner. We have lived with the amazing aromas brought to bear by Indian spices.
Good food is the glue that keeps us all together and even today we ensure that we eat homemade Indian food every day. Our typical Indian meals play to almost all the senses, with an assortment of colours, smells, flavours and textures.
Throughout we have never questioned the health benefits of our spices and ingredients, including amongst others cinnamon, cloves, ginger, pepper, turmeric, coriander, cumin, cardamom, garlic, ginger, bay leaves, chillies, mustard, celery seed, paprika, saffron and tamarind. Only recently have the true health benefits of these spices been popularised to health-conscious consumers.
Yet over this same period we have seen the phenomenal growth of the Indian Food restaurant industry morphing our dishes into heavy, over-spiced and unhealthy fare that is eaten only in the evenings after a good night out.
Through Zabardast, we wanted to transform this perception back to how we, as Indians, understand Indian food – fresh, healthy and homemade. We wanted to make our colours, smells, flavours and textures accessible to everyone from breakfast through lunch and dinner in a quick service restaurant format. From parathas to Bombay Aloo we make them all fresh in our kitchens using healthy recipes. Our chicken and lamb are of the highest quality, procured fresh from local butchers and grilled without oil or fat.
The fusion of many religions and cultures is truly reflected in Indian cuisine. Consequently, we need invent nothing new for those who prefer vegetarian or vegan options, plenty already available at Zabardast,whether you want to configure your own wrap, salad or you want something more traditional from the Biryani Bar.
